WOW sure is hot out there - so take the heat out of your kitchen with this recipe!
.....and I present to you -          

Beer Lime Grilled Chicken !



Ingredients
  •     1 lime, juiced
  •     1 (12 fluid ounce) can light colored beer (I used Miller High Life - PBR would be better)
  •     2 teaspoons honey
  •     2 cloves garlic, minced
  •     2 tablespoons chopped fresh cilantro
  •     Salt and pepper
  •     4 skinless, boneless chicken breast halves
Directions
  1. In a bowl, mix the lime juice, beer, honey, garlic, cilantro, and salt and pepper until the honey dissolves. Pour the mixture over the chicken, cover and marinate for 30 minutes.
  2. Preheat an outdoor grill for medium heat and lightly oil grate.
  3. Remove chicken from marinade and shake off excess; discard remaining marinade. Grill chicken until tender and juices run clear, about 7 minutes per side.
This is remarkably tasty!!
Very quick and easy to make - while the marinating was going on, I made baked potatoes and corn by wrapping in foil and placing on the grill (the corn I put on just before the chicken, the potatoes were on the entire time).  Sooooooo quick and easy, with almost no cleanup!  Enjoy!
