Five Spice Tilapia

Ingredients 1 pound tilapia fillets 1 teaspoon Chinese five-spice powder (see Tip) 1/4 cup reduced-sodium soy sauce 3 tablespoons light brown sugar 1 tablespoon canola oil 3 scallions, thinly sliced Preparation Sprinkle both sides of tilapia fillets with five-spice powder. Combine soy sauce and brown sugar in a small bowl. Heat oil in a large nonstick skillet over medium-high heat. Add the tilapia and cook until the outer edges are opaque, about 2 minutes. Reduce heat to medium, turn the fish over, stir the soy mixture and pour into the pan. Bring the sauce to a boil and cook until the fish is cooked through and the sauce has thickened slightly, about 2 minutes more. Add scallions and remove from the heat. Serve the fish drizzled with the pan sauce. Notes: WOW lots and lots of flavor in this - was a big hit. I served mine with a steamed sweet corn southwestern style mix.

Where to start?

Damn, its a hot one out here in NJ.  So of course it will be a grill night! Turkey cutlets, wrapped in prosciutto, served over melon salsa with a nice drink of Summerbeer on the side sounds about right!  Recipe and pictures to follow!

Chicken Flautas with Avacado Cream, Radishes, and Salsa

Chicken Flautas - A very nice way to use up leftover rotisserie chicken.......... Ingredients     1 Hass avocado, halved and pitted     1/2 cup sour cream     2 limes (1 halved, 1 cut into wedges)     Kosher salt     6 radishes, thinly sliced     3 cups shredded rotisserie chicken     1 1/2 cups fresh salsa     16 corn tortillas     Vegetable oil, for frying     2 tablespoons roughly chopped fresh cilantro Directions Scoop the avocado into a blender. Add the sour cream and the juice of 1/2 lime and pulse until smooth. Season with salt. Squeeze the remaining 1/2 lime over the radishes in a small bowl and sprinkle with 1/4 teaspoon salt. Toss the chicken with 3/4 cup salsa in a medium bowl. Wrap the tortillas in paper towels and microwave until soft, about 45 seconds. Spoon the chicken mixture down the middle of the tort...
