Good morning!
Well last nights dinner was a huge hit, so I now present to you:
Hoisin Honey Glazed Pork Tenderloin w/ Grilled Pineapple!

 Looking good! - The round wedges are actually a new product that I saw and was happy to try - "Seasoned Grillers" by Ore-Ida - Not bad, about $3.75 - did need some descent salting though....
Ahhhhh - nice looking grill lines on the thirded pineapple half..... Wow what a pain to cut those things, but thanks to my wife, who picked up a set of Foreversharp knives a couple of months back, it made the job MUCH easier......
 Yay!  The finished and plated final product!  The tenderloin had a very nice flavor, and was juicy!  The pineapple, due to a slight rub of brown sugar, was a better than perfect compliment.  I was actually "forking" a piece of the pineapple, then the pork, and eating in one bite...sooooo good!

The recipe -

Ingredients

  •     1/4 cup(s) hoisin sauce
  •     1 tablespoon(s) honey
  •     1 tablespoon(s) grated fresh peeled ginger
  •     1 teaspoon(s) Asian sesame oil
  •     1 whole(s) (1 1/4 pounds) pork tenderloin
  •     1/2 medium pineapple, untrimmed
  •     2 tablespoon(s) brown sugar

Directions

  1.  Preheat outdoor grill for direct grilling over medium heat. In small bowl, combine hoisin, honey, ginger, and oil.
  2. Place pork on hot grill rack. Cover grill and cook pork 15 to 20 minutes, turning occasionally.
  3. With serrated knife, cut pineapple half into 3 wedges. Rub cut sides of pineapple with brown sugar.
  4. Grill pineapple 10 minutes or until browned on both sides, turning over once. 
  5. While pineapple is grilling, brush pork with hoisin-honey glaze and turn frequently until temperature on instant-read thermometer reaches 155 degrees F. Transfer pork to cutting board; let stand 10 minutes. Transfer pineapple to platter.
  6. Use a thin paring knife to slice under the skin of the pineapple so separate the fruit, then slice small cuts from top to bottom.  (see the final picture above) 
  7. Thinly slice pork and serve with pineapple wedges.

NOTES:
Hoisin sauce is an Asian BBQ sauce, and can be found in most supermarkets in the Asian food sections.  Shoprite carries it all the time, as well as A&P, and Kings.
